Mint Fruit Salad

Sweet and Savoury at its finest.....

In the heat of summer, with all its magic and freshness, what could be better than a delicious fruit salad.

Fruit contains natural sugars, ones that come along with fibre and nutrients which stabilize our blood sugar. Like a blessing from mother nature herself, we are grateful to be able to enjoy so many fruits all season long.

During the summer, fruits taste the best, as it is their season to shine.

I hope this fruit salad inspires you to be creative with the harvest of the summer.

Ingredients:

An apple or pear

A handful of red or green grapes

2-3 tangerines, peeled and separated

1 tbsp crumbled organic goat cheese or cashew cheese

2-3 small leaves of fresh mint, finely chopped

Preparation:

1. Slice the apple or pear into one quarter inch pieces and add to a small bowl.

2. Peel and separate tangerine pieces, and add to the bowl.

3. Add grapes after you have rinsed and plucked off the vine.

4. Crumble goat cheese on top.

5. Garnish with mint.
