A health food dream come true
I had a craving for coconut cream pie with its soft texture and light sweetness. So instead of consuming excess calories, I made my own light and healthy version and the results were INCREDIBLE!! This desert is full of healthy fats and nutrients. It is a gift for when you need a little treat without all the added the sugar and chemicals. This treat is like a whip cream coconut dream. Enjoy.
1 can of coconut milk - remove any water
1/4 cup plain greek yogurt
1 tsp stevia or monk fruit extract
1/2 tsp cinnamon or pumpkin pie spice
1. combine the above ingredients
2. whisk with a fork for 20 seconds to soften any lumps
3. serve with fruit, or on top of low sugar granola, you can add it to a shake or smoothie or enjoy it on its own. So many options.
4. Lasts in the fridge for up to a week
