This potato gives you energy and burns fat.
I cook this dish especially to celebrate the change in season, when the air becomes fresh and cool, and our meals become hearty and warm.
2 large sweet potatoes
¼ cup coconut oil
2 tbsp turmeric
1-2 tsp sea salt, himalayan salt, or herbamare blend
½ tsp pepper
2 tbsp thyme
Place two large sweet potatoes directly on the medium oven rack.
Bake at 375-400 degrees for 20-25 minutes. The potatoes will only be partially cooked.
Remove the sweet potatoes from the oven and let cool for 10 mins.
Using a large knife, cut the sweet potatoes into ½ inch cubes. Be careful in case the potatoes are still hot.
Oil a baking pan with 1/4 cup of warm liquid coconut oil.
Place the sweet potato cubes in the pan and toss around with the oil.
Add the seasonings or Quick and Simple Seasoning Blend over the sweet potatoes.
Sprinkle the mixture with thyme.
Toss the oil, sweet potatoes and spices together again.
Continue to bake the sweet potato cubes at 375 degrees for another 25-30 mins.
Turn the mixture every 15 mins so that it doesn’t burn.
Remove from oven, let cool and serve.
